Why Add Sweet Potatoes to a Brownie Recipe?

Sweet potatoes are definitely not the “norm” in a brownie recipe, but they help act as an egg substitute in this recipe, helping to bind the brownies while keeping them moist and rich in texture.

They also add some extra nutrition! Sweet potato are loaded with fiber and are a good source of beta-carotene, which is converted to vitamin A in the body. Vitamin A is important for maintaining a healthy immune system.

Vegan Sweet Potato Brownie Recipe

VEGAN SWEET POTATO BROWNIE RECIPE

These little vegan sweet potato brownies are a total powerhouse. They contain sweet potato hidden in there. Plus, the brownies are oil-free, whole grain, and naturally sweetened with dates.

INGREDIENTS

  • 8 medjool dates, pitted
  • 1 cup  mashed sweet potato
  • 1 cup  plain unsweetened plant based milk (I used almond milk)
  • 1/3 cup raw sugar
  • 1 tablespoon  vanilla extract
  • 2/4 cup whole wheat pastry flour
  • 1/4 cup buckwheat flour
  • 1/4 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup raisins (optional but recommended)
  • 1/3 cup vegan chocolate chips (optional)

INSTRUCTIONS

  1. Soak the pitted dates in water and microwave for 1 minute.  Drain the soaked dates well.
  2. Meanwhile, preheat the oven to 350 degrees Fahrenheit and line an 8- or 9-inch square baking dish with parchment paper.
  3. Add the dates to a blender along with the sweet potato,  milk, raw sugar, and vanilla extract. Blend until completely smooth, stopping to scrape down the sides if needed.
  4. In a mixing bowl, stir together the whole wheat flour, cocoa powder, baking powder, and salt. Pour in half of the wet mixture into the dry mixture, stir to combine, and then pour in the other half. Mix until just combined. Fold in the raisins and chocolate chips if using.
  5. Pour the batter into the prepared pan, smoothing the top with your mixing utensil. Bake for 20 to 25 minutes, or use a knife and make sure that comes out clean. Allow to cool before slicing and serving.
  6. Enjoy!
