I have taken my dieting struggles and created the resources and support network I wish I had when I was struggling with my weight.

My Story

I Know what it feels like, vegan babe!

Hi, I’m Carol—a vegan Registered Dietitian and Vegan Weight Loss Coach dedicated to helping you lose weight, feel empowered, and set achievable goals for a healthier, more confident life.

I’ve guided countless women toward success using my Vegan Girl Method™, which I developed after struggling with my own weight. Back in college, I gained nearly 25 pounds and found myself battling low self-esteem, restrictive eating patterns, and a rollercoaster relationship with food. I felt miserable, both physically and emotionally, and knew I needed a sustainable solution.

I dove into my nutrition studies, earning my Bachelor of Science in Nutrition and Dietetics from Florida International University, and went on to complete my Master of Science in Nutrition at Rosalind Franklin University. I completed 1200 hours of supervised practice through Stony Brook University’s accredited internship program before passing the national board exam to become a Registered Dietitian.

Along the way, I discovered the powerful connection between fueling our bodies correctly and maintaining a healthy weight, without giving up favorite foods. Through my journey, I learned what most programs overlook: balance. It’s not about eliminating the foods you love, but rather about creating realistic habits, practicing mindful eating, and focusing on balanced, plant-based meals.

Today, as a vegan Registered Dietitian, I’m passionate about teaching you how to nourish your body for lasting, balanced weight loss, all while celebrating your vegan lifestyle. My proven weight loss method focuses on portion control, meal balance, and a realistic approach that includes all foods—because I believe your favorite vegan treats can and should fit into a healthy plan!

I specialize in vegan weight loss, body composition changes, and improving your relationship with food—backed by my accreditation through the Academy of Nutrition and Dietetics. I’m here to show you that you can reach your weight goals, feel confident in your choices, and enjoy the process every step of the way. Let’s make it happen together!
