I have taken my dieting struggles and created the resources and support network I wish I had when I was struggling with my weight.

My Story

I Know what it feels like, vegan babe!

I’m Carol, a vegan Registered Dietitian, and a vegan weight loss coach. I’m ready to help you lose weight, feel empowered, gain confidence, and set achievable goals.

I’ve helped numerous vegan women develop sustainable goals and create a plan for accomplishing those goals using the Vegan Girl Method™. I’m ready to help you because I was you.

I’ve taken my struggles with managing my weight and used my experiences to develop the Vegan Weight Loss Nutritionist program to inspire other women to learn balanced vegan eating.

After my sophomore year of college, I gained nearly 25 pounds. As a result, I struggled with low self-esteem and insecurity about the way I looked and felt. Equally important, I was not happy. I developed a pattern of restrictive eating resulting in low to no energy throughout the day, leaving me feeling unhappy and causing me to binge at night. This left me both without physical energy and emotionally exhausted. I started my junior year determined to conquer my weight loss demons. I started taking classes in nutrition developed a passion for healthy eating and running. My college studies in nutrition helped me understand the complex chemistry and physiology that is involved in properly fueling our bodies. At the same time, my journey helped me understand what no one was talking about: How can you attain weight loss goals while still enjoying all your favorite foods? At the same time, my journey helped me understand what no one was talking about: How can you attain your weight loss goals while still enjoying your favorite foods? Until I was able to find the balance between nutrition, weight loss, and enjoying my favorite foods, I realized I would travel the self-destructive dieting path that so many women I met had and continue to travel. Now as a vegan Registered Dietitian, I am not only passionate about teaching you to fuel your body for lasting and balanced weight loss… but I also want you to feel empowered in your vegan choices. Most importantly, I want you to know that all your favorite foods can and do fit!

My proven weight loss method evolved from my own experiences. I realized how easy the use of portion control, building balanced vegan meals, mindful eating, and a realistic approach towards weight loss that includes all foods was what vegan women needed to achieve their healthy weight goals and improve their relationship to food. I am an accredited Registered Dietitian through the Academy of Nutrition and Dietetics who specializes in vegan weight loss, body composition change, and improving your relationship to food.
