This vegan apple crisp is the absolute best. It’s perfectly sweet and buttery, without an overload of sugar or fat. It’s crispy, crumbly, and melt-in-your-mouth luxurious. It uses olive oil instead of butter and a moderate amount of raw sugar and maple syrup.

Plant Based Apple Crisp

INGREDIENTS

FILLER
  • 10 medium apples (5 granny smith, 5 honey crisp)
  • 2 Tbsp of Lemon juice
  • 1/3 cup turbinado sugar
  • 1 1/2 tsp ground cinnamon
  • 3 Tbsp cornstarch
  • 1/4 cup water
  • 1/2 tsp ground ginger
TOPPING
  • 1 cup old fashioned oat meal or gluten free oats
  • 1/2 cup almond meal
  • 1/2 cup whole wheat flour – you can also use all-purpose gluten-free flour for a gluten-free option
  • 1/2 cup maple syrup
  • 1/2 cup raw walnuts, chopped
  • 1/4 tsp sea salt
  • 1 tsp ground cinnamon
  • 1/2 cup olive oil

INSTRUCTIONS

  1. Heat oven to 350 degrees F.
  2. Peel apples, quarter, remove cores, and  slice lengthwise.
  3. Add to a large mixing bowl and top with filler ingredients. Toss to combine. Add to a 9×13 baking dish.
  4.  Add all topping ingredients to a large mixing bowl. Stir to combine. Pour over apples in an even layer.
  5. Bake for 50 minutes uncovered or until the filling is bubbly and the topping is deep golden brown.
  6. Let rest at least 30 minutes before serving. This is delicious with a plant based ice cream, such a almond or coconut.
  7. Enjoy!
